SHRIMP CASSEROLE
1 pound raw shrimp, cleaned and peeled
1 medium onion, chopped
1 bell pepper, chopped
1 can of mushrooms, stems & pieces,
drained
1 family-size can of cream of mushroom
soup
2 cups of shredded mild cheddar cheese
1 package of Italian seasoned croutons,
crushed
Saute onion, bell pepper & mushrooms in
olive oil for a few minutes. Mix with shrimp and mushroom soup, pour
into greased casserole dish (9 x 13), and bake @ 425 until bubbly,
about 30 to 45 minutes.
Top with shredded cheese, put back in
oven (425) until melted, about 10 minutes but watch closely.
Top melted cheese with crushed
croutons, put back in oven (425) until browned, about 10 minutes
but, again, watch closely.
